A new fine dining establishment named Susu is preparing to open in the West Loop's historic Randolph Street location that once housed the three-Michelin-star restaurant Grace. The newcomer will feature what they've branded 'Mediterrasian' cuisine, blending "bold and indulgent flavors of the Mediterranean with the vibrant and intricate tastes of Asia." Menu previews suggest an eclectic selection ranging from maki rolls to whole duck shawarma.

Business paperwork lists Michael Olszewski, former owner of Grace, and Paul Alqas, co-owner of Medi, as business managers of the venture. Chef Alexander Willis, who previously worked with Alqas at Mya via Medi, will lead the kitchen. Though no firm opening date has been announced, the owners are anticipating an early 2026 launch. The 652 W. Randolph location has a storied history as one of Chicago's most celebrated dining spaces, having transformed from Grace to Yugen (a Japanese fine-dining spot) to Aikana (an upscale Latin American restaurant) before making way for this latest concept. Susu enters one of Chicago's most famous dining rooms, setting expectations high as it joins the West Loop's competitive culinary landscape.
