West Town's Boldest New Restaurant Just Opened — and the Neighborhood Helped Fund It
By Socialhood News · Il/Chicago/West Town ·
West Town's Chicago Avenue corridor has a buzzy new arrival this June, and this one came to life in a truly community-powered way. Gilda, a modern pintxos bar at 1450 W. Chicago Ave., has opened its doors — and its origin story is as compelling as its menu.
The brainchild of veteran Chicago chefs Jeremy Leven (mfk., Mama Delia) and Rafael Esparza (Momotaro, Kimski, FAFO), along with partners Anthony Baier and beverage director Ines de Haro, Gilda blends coastal Spanish tradition with no-nonsense Chicago energy. Think crispy prawn heads, Iberico pork with inventive sides, and a black Basque cheesecake — all in a lively, 44-seat neighborhood spot. But what really sets Gilda apart is how it got here: after being denied a traditional bank loan, the team launched a "Compañero" loyalty card, inviting community members to invest any amount in exchange for future perks and discounts. The effort raised more than 82% of its $20,000 goal, proving that West Town neighbors put their money where their mouths are when it comes to supporting independent, chef-driven hospitality.
With nearly 40 combined years in Chicago kitchens between its chef-founders, Gilda is shaping up to be exactly the kind of neighborhood original that keeps West Town's dining scene miles ahead of the rest. Head to 1450 W. Chicago Ave. to taste what all the buzz is about — and raise a pintxo to the community that made it happen!
