The $20 million redevelopment of Vienna Beef's iconic former Bucktown factory has faced a series of delays since its spring 2024 target date came and went. The company's focus on expanding its pickle business in recent years is partly to blame for the slower-than-expected timeline, according to Vice President Tom McGlade. But Vienna Beef is emphatic that the project is still very much happening — the restaurant, factory store, corporate offices, and sprawling outdoor plaza at the Damen-Elston-Fullerton wedge remain on track, just on a longer runway.
